Pasta in Roasted Red Pepper Sauce

What are some foods that cross your mind when you think of a toddler’s favorite food? The ones that come to mind for me are peas and spaghetti. However, overtime, I’ve come to realize that my kids aren’t fond of spaghetti (red) sauce. Not quite sure when this happened. My oldest two are now 10 and 8 and it was a recent discovery when my 10 year old mentioned that she’d like the pasta separate from the meat sauce. She didn’t want it touching. Then, my 8 year old insisted on meatballs instead of meat sauce. 

With a box of pasta and a bottle of roasted red peppers in the pantry, I came to the idea of roasted red pepper sauce. Surely, I’m not the only one who has had this idea! I’m not one to reinvent the wheel so I quickly jumped online in search an easy roasted red pepper pasta sauce

Note:

  • Learn from my mistakes and don’t empty the whole jar off roasted red peppers in the skillet. The excess water makes the sauce super bitter. EEK! We salvaged it by adding brown sugar. 
  • Add some sliced sausage to make it a more satisfying dish. 
  • We’ve made this without the cream and butter for a healthier alternative.
